This drink recipe is: two parts preparation, one part served to your girlfriend/wife/date = three parts of her showing her full appreciation for your effort.
But is it good for you? After all, this is the Cook This…Get Laid blog, where healthy prevails. I can confidently say that this cocktail is healthier than most, since you’re using mostly fresh ingredients. Consider this a mental health drink, which is very much a part of your overall well-being. Now if you have a teetotaler in the house, it’s FULLY healthy (sans the simple syrup). This cocktail ranks just short of Cook This…Get Laid’s highest honor: 4 stars.
The inspiration came from Katsuya Restaurant. I’ve been working on my own version of their Cucumber Watermelon Mojito for awhile now. It’s not the same, but it’s a close second.
If you can juice the watermelon and the cucumber, the flavors are spectacular. If not, muddle them with a potato masher, pestle, wooden spoon or any other smashing device.
Make sure this drink comes out as cold as possible.
Watermelon Cucumber Mojito
- 1 large handful of fresh mint
- 1 teaspoon simple syrup
- 1/4 cup fresh lime juice
- 2 cups crushed/juiced watermelon (overly ripe please)
- 1 cup crushed or juiced cucumbers
- 5 glugs (or 5 ounces) of white rum, Appleton is delicious and not pricey
- Seltzer water
Place the mint, syrup and 4 tablespoons of lime juice in the bottom of a mixing glass, and muddle until the mint starts to become very fragrant. Add the watermelon, cucumbers, remaining lime juice and rum and stir until well mixed. Add ice and then seltzer water to taste.
