A Really Truly Delicious Gluten-Free Banana Bread

Gluten-free deliciously.

Going gluten-free eight years ago was one of the best things I’ve ever done.  When I met my husband around the same time, he’d been avoiding it for years.  He was one of those people who spent his adult life sneezing and congested-until giving up wheat products altogether.  Unfortunately, gluten is in everything that tastes delicious: breads, pancakes, muffins and pasta are only a few.

I was dealing with some pretty serious health issues at the time.  The only thing I’ll share about those problems is that that they’re fully gone, and I attribute 90% of it to giving up refined foods-namely wheat flour.

You have nothing to worry about when it comes to taste.  Gluten-free products are in many stores, or you can order these products online.  There have been recent advancements in the gluten-free world, and thank God.  Many gluten-free recipes/products were pretty horrific in the early days.  Back in 2003 (when I chose the GF lifestyle), GF bread could easily be mistaken as a brick, GF cookies were often substituted for hockey pucks, and GF pancakes sat in your stomach for days.  Those days are long gone, and when I serve things like GF banana bread, no one knows the difference.  If anything, they RAVE about it.

What? You’re surprised this is a gluten-free blog?  I have no desire to scream gluten-free from the rooftops, that’s completely unsexy.  I believe it can make a difference in your overall health and hope you’ll consider it-but ultimately you are the one who will make the choice.  This is one of the easiest recipes you’ll find for gluten-free banana bread, unless you want to go out and find all of the different flours, xanthan gum, and all that other good stuff that goes with gluten-free baking from scratch.  Which is pretty great, satisfying and feels like you’re really accomplished something, but I’ve got a full day ahead of me.

This will do nicely.

A Really Truly Delicious Gluten-Free Banana Bread

  • 2 tablespoons melted butter
  • 2 large eggs, beaten
  • 1/2 cup of raw honey (Trader Joe’s has a good one)
  • 1 tablespoon of Blackstrap molasses (has less sugar than traditional, not required for this recipe)
  • 2 mashed bananas
  • 1/2 banana cut into 1/2 inch slices
  • 1 teaspoon of good quality vanilla
  • 1 3/4 cups of Pamela’s Wheat-Free Gluten-Free Baking and Pancake Mix (I get mine from Amazon.com)
  • 1/2 teaspoon salt

Heat the oven to 350.  Beat together butter, eggs, honey, molasses and mashed banana.  Add remaining ingredients and fold together.  Pour into a lightly buttered loaf pan and decorate with sliced bananas.  Bake for an hour, when a toothpick comes out clean – you’re eating hot, delicious banana bread.

Or even better, serving it to her.

      Same here, baking really isn’t my thing. The exact nature of it throws me off! But with this, you can make little mistakes and it will still be delicious!

    It’s hard, all the choices. i’ve done vegan, but never gluten free. Would be great for my daughter I think, she has crazy making allergies. Do you think the Pamelas baking mix is easy to find in stores?

      Try ordering it from Amazon, that’s how we get it here in California. And if you order it as a recurring shipment, they knock a bunch off the price!

    Yum! I love gluten free cooking so easy on the stomach. Yummee sounding recipe! You can get Pamela’s cake and pancake mixes at Save On Foods in the natural baking aisle I know for sure.

    I don’t use mix I use pre mixed by arrowhead mills do you know how much baking powder and soda I could use?
