Cheeseless quesadilla? Man, that's good. And easy.

This meal is SEXY.  My cheese-less quesadilla is sexy because it’s delicious, slightly messy, fulfilling, comforting and healthy.  I know what you’re thinking, quesadillas are not considered healthy.  But if you’ve been following my blog, you would know that I create recipes designed to get you connected with your beloved – through healthy meals.  The traditional quesadilla is not what will pull the Cook This…Get Laid trigger, which is why I reworked this recipe, just for you.

For a moment, let’s reminisce about the traditional quesadilla.  (Sigh) They are one of the ultimate comfort foods.  Those piping hot tortillas are always stuffed with a gooey mix of cheeses, salty meat and sometimes dark, roasted salsa – oooh! The idea of that savory taste makes me want to rip my shirt off!   But afterwards, my gut feels like a bomb went off, and then the ensuing food coma arrives.  It’s no wonder why you’re stretching out on the couch with all that fat, carbs and more good ole fat.

But why should I give up one of my favorites dishes?  Since being wheat-free and mostly dairy free for nine years, I haven’t taken the plunge into one of these because the massive amount of cheese and gluten really don’t fit with how I eat, or what I write about.  But thanks to the many choices of gluten or wheat free tortillas, my love for these is back!

My non-cheese quesadilla.

I’ve seen brown rice tortillas in many grocery stores, as well as Trader Joe’s and Whole Paycheck (aka Whole Foods).  The Food for Life folks make sprouted grain tortillas too.

What about the inside? Who needs cheese when you have guacamole, black beans, corn and a garnish of salsa?  When you combine these ingredients, you won’t even miss the cheese when you’re full and satisfied.

Men: make this for your lady.  It took me TEN minutes to throw this together.  That’s far less time than it takes to drive, sit down and order this at a Mexican joint.

Women: get your man to make this for you.  It’s what you want.  It’s what every woman wants to eat. Delicious, filling and not fatty.

Mona’s Quesadilla sin Queso

  • 2 avocados
  • 1 small garlic clove, minced
  • juice from 1/4 of a lemon (fresh please)
  • 1/4 small onion, chopped
  • 3 dashes of Tabasco sauce
  • 1 can black beans (Trader Joe’s Refried Black Beans w/jalapeno are tasty x 10), but if you’re ambitious, make your own!)
  • 3/4 cup frozen organic corn – defrosted (in the summer, you MUST use fresh)
  • 1 small dash of cumin
  • kosher salt
  • brown rice tortillas
  • COST: less than $10 dollars

Place the beans and corn in a small saucepan and warm up with a medium heat. Add cumin and salt.  Then move onto the guacamole.  Scoop the avocado into a bowl, and add garlic clove, lemon, salt and Tabasco.  Mix well, and taste to make sure it doesn’t need more lemon, salt or hot sauce.  Then add the onion.  (By the way, guacamole is wonderful with or without the garlic or onion – just add or subtract these according to HER tastebuds.)  My recipe for guacamole is on the CTGL YouTube channel.

Take a griddle pan, and heat it up over a medium heat.  Once warm, add a teaspoon of vegetable oil to the pan.  Spread the oil with a paper towel, then place the tortilla on and spread the bean and corn mixture evenly on half of it.  The tortilla only takes two minutes to get brown, I even twist the tortilla around to get it darkened nicely.  Remove from heat, and place on a serving plate.

You’ve got an open-faced tortilla on a plate, that just needs guacamole. Spread it ontop of the beans and corn, fold over – and you’re eating.

    I love quesadillas and agree with your thoughts about being a comfort food. I’ve never thought about a cheese free version but these sound delicious! I’ll give them a go soon.

  2. I’d probably add a little cilantro ’cause that’s sexy to me. Do you add the oil to the pan because the tortillas are brown rice?
