I’ll make this short and sweet.  (Pun intended.)

I won’t go into details about why going raw was one of the best things I ever did, because  I’ve already written about why eating raw is wonderful for you.  And while I don’t do a 100% raw way of eating anymore, I still have many recipes that show up in my kitchen from time to time.  One of them is a raw “cheesecake.”

Stop groaning men, I can hear you now.  I know your memory is short, which is why I need to remind you about preparing healthy meals for your woman is a good thing.  Keep making her meals like this that taste good, make her skin glow, and lose inches typically result in her rewarding you in the bedroom.  So stop knocking my method, and make recipes like this one!!

Now, this is not your mama’s cheesecake. Or the Cheesecake Factory’s either.  It’s made from raw nuts and dates and can be eaten for breakfast, lunch or dinner.  I love this sweet nutty recipe, which requires less than 30 minutes prep and an hour of refrigeration.

Raw “Cheesecake” Recipe

Start with the crust.

  • 2 cups of raw soaked walnuts (soaked for at least two hours, make sure they’re rinsed and dried!)
  • 12 pitted dates – take the seeds out or buy them already pitted
  • a pinch of salt

Place these in a food processor or Vita Mix for about 15-30 seconds.  Stop and scrape the top for any extra bits that may be around the top of the processor.  You might need to add a little water too, but no more than two tablespoons or the crust won’t be firm enough.  It should look a little crumbly. Remove the crust mixture and place in a pie tin.  Make sure it’s even all the way around by using your fingers!

The filling is incredibly easy to make.  Get your clean food processor ready for one more go.

  • 3 cups of soaked raw cashews, (make sure they’re fully rinsed and dried)
  • 1 cup raw honey
  • 1/2 cup fresh lemon
  • 2/3 cup of pure coconut oil (you might need to soak the bottle in warm water to get it pliable to work with)
  • a dash of vanilla extract

Blend everything together until it’s VERY smooth.  A Vitamix is the best thing to use, but a blender will be fine.  Then pour the deliciousness right into the crust, smooth the top over with your spoon.  You want it refrigerated for at least one hour.

  • 1/4 frozen raspberries
  • 1 teaspoon of raw honey

Mix it together.  Take out your cheesecake from the fridge and spoon the raspberry sauce over the top.  EAT.

  1. I haven’t had cheese cake in over 20 years at this point. Love that it is both GF and DF (and even egg free). I think I found my no-bake dessert for this weekend!
