Summer relief in a frosty glass

I am sitting in an air conditioned room, and it is still hot. Standing in front of the fridge checking out the limited inventory, revealed this:

While blending all of these ingredients, I threw in a banana for good measure for some additional creaminess. No need to add ice, the frozen fruit will do the trick.

This will cool you off in one sip.

Pineapple, Banana Coconut Smoothie

2 cups frozen pineapple chunks
2 cups vanilla coconut milk (Trader Joe’s is only $1.99)
1 banana

Get your blender ready. Throw in the pineapple, coconut milk and banana. Blend until smooth. If it’s too thick, add more coconut milk. This makes enough for two, and if you really want to have friends stop by on a regular basis, add two shots of rum.
