Here’s a few words on quick breads: you can’t mess them up. They are forgiving, easy, cheap, fast and the kind of thing that rocks your world on a cold day in January. Just follow these steps:

  1. Throw in a handful of key ingredients into a bowl.
  2. Pour the batter into a 9×5 loaf pan.
  3. Have little to worry about while your 350 degree oven doubles the warming effect of your heater, and your home fills up with the scent of lemon and vanilla.
  4. Remove this  from the oven and wait for it to cool. Or not.
  5. Cram every warm bite into your mouth.

I love that this recipe (inspired by Bon Appétit) costs less than $3 bucks. But the substitution of butter with yogurt, and less oil than the original recipe had me and my husband finishing this at one sitting. What you’ll get is a slightly sweet, lemony, intensely moist bread that could be mistaken for cake.

So eat it. 

Gluten-Free Lemon Yogurt Bread

  • Vegetable oil, preferably grapeseed
  • 1 1/2 cups gluten-free flour (I use Better Batter), or use traditional flour if you prefer
  • 1 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup pure honey or sugar
  • 1 generous tablespoon finely grated lemon zest
  • 3/4 cup whole-milk Greek yogurt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 teaspoon vanilla extract

Turn up that oven to 350°. I don’t use vegetable spray, but you are more than welcome to use it. I pour a bit of vegetable oil on a paper towel and spread around the 8 inch loaf pan. 

Mix your dry ingredients first by whisking 1 1/2 cups flour, baking powder, and kosher salt in a medium bowl.

Then work on the lemon honey/sugar. Stir the honey or sugar with lemon zest in a large bowl until the honey smells like lemon. Then add the yogurt, oil, eggs, and vanilla extract. Whisk until combined well. Fold in dry ingredients just to blend.

At this point, you may have to swat a few hands away from the batter before pouring it into the oiled pan. Everyone’s oven has a different personality, so let it cook for 30 minutes, then check every 10 minutes to see how it’s doing. If the top is golden brown and a toothpick comes out clean, everything is good in the universe.
