My husband sometimes heads into the kitchen and putters around like he’s doing nothing. But I know better. I hear the occasional clanging of bowls, opening of refrigerator, spoons and a manly grunt of approval. You know that sound, “Umph.” Or, Uh-huh.”

He’s got some serious instincts when it comes to cooking. He made the world’s best vodka pink sauce from scratch many years ago, and each time we prepare it for others they are wowed. Same goes for his eggless “egg” salad, lovingly titled: Craig Salad.

Before we go into this, I have a severe dislike of tofu. Rather, disdain of it’s mistreatment. My omnivorous sensibilities can’t comprehend how cooks underutilize and under season this white slab of blandness. I only like it (sometimes) in Asian restaurants. But I’ve come around thanks to my main squeeze/vegetarian husband, Craig.

We even fooled my mother into loving Craig Salad, and she believes Craig is the strangest eater.  She loved this and asked for his recipe. And it’s far cheaper than the traditional egg or chicken salad.

A word on mayonnaise.

I know plenty of you think it’s gross. As a child of the 70s, I have it running through my veins. But I don’t like the cholesterol, or the way I feel after consuming too much of it.

In recent years, I’ve discovered some amazing new and plant-based mayonnaise products on the market. Most importantly, they taste just as good or better than the traditional ones. Earth Balance’s Mindful Mayo is either the same price of traditional mayo, or slightly more expensive (no more than a few dollars). My choice is Earth Balance, which you can buy from Whole Foods or online at Amazon. 

Chop up some celery, onion, add cumin, tumeric and mustard with some delicious results.

Better Than Egg Salad: Craig Salad

Ingredients
  1. One half container of Trader Joe's Organic Sprouted Tofu
  2. 2.5 heaping tablespoons of Earth Balance Mindful Mayo
  3. 1 teaspoon of whole grain mustard or Dijon mustard
  4. 1 large stalk of chopped celery
  5. 1/4 cup chopped onions
  6. sea salt
  7. cracked pepper
Instructions
  1. Place the tofu in a colander and squish with a potato masher. Yes, I said squish. Allow the liquid to drain from the tofu, and place in a medium sized bowl.
  2. Add the Mindful Mayo, mustard, chopped celery and onion.
  3. Season with pepper and salt to your own tastebud's delight.
  4. Stir until well combined, and serve over your favorite Craig Salad vessel. Mine is a long piece of romaine lettuce. Craig's choice is a sprouted wheat bagel.

    Mayo. That stuff is a struggle for me. I need to find one that is 3 simple ingredients and that’s it. Or I will just continue to use some mustard, garlic and olive oil :) This does look like a YUM recipe – even though I am not a tofu kind of girl!
